Fantastic Foodie Friday~Asian Chicken Lettuce Wraps

Ingredients:

2 tsp canola oil
8 oz white mushrooms, chopped
1 lb lean ground chicken
1 clove garlic, minced
1/2 tsp fresh ginger, minced
1 cup green onions, sliced
1 (8 oz) can sliced water chestnuts, drained and chopped
8 large lettuce leaves
1 tbsp toasted sesame oil
1/2 tbsp rice wine vinegar
3/4 tsp lower-sodium soy sauce
1/2 tsp honey
crushed red pepper flakes, to taste

Directions:

Heat canola oil in large nonstick skillet over medium heat. 
Add mushrooms and cook for 5 minutes or until tender, stirring occasionally. 
Place mushrooms in a large bowl, set aside.

Add chicken, garlic and ginger to skillet and cook for 6-7 minutes or until chicken is brown, breaking the meat up as it cooks. 
Combine the chicken mixture with the bowl of mushrooms; 
add green onions and water chestnuts; toss together. 
Combine sesame oil, rice wine vinegar, lower-sodium soy sauce, honey and crushed red pepper flakes in a small bowl; whisk to mix well. 
Divide chicken mixture evenly between each lettuce leaf and top with sesame oil mixture. Optional: Garnish with fun, bright extras, like the red peppers and scallions seen above.

Count Down~

When I woke up this morning,
I had a million things running through
my head until I read this post...
Do you know where you will be in 
6 months?
I then shift my thinking, 
and start trying to invision 
what things will look like...
I will be in a new State.
A town that,
I have never lived in before.
Not sure what kind of living 
arrangemets there will be.
I Just know that 6 months from now.
I will not be here,
and I will be closer to there...
Hopefully with little to,
 No Snow 
on Christmas day...

Fantastic Foodie Friday~ One Pot Wonder


This is a picture of what was cooking on my stove today, 
the Blow your mind Tomato Basil Paste!!!

Pasta, Tomatoes, Veggie Broth, Olive Oil, and Seasonings (details below)

Throw it all in the pot, INCLUDING the uncooked Pasta, and cook!
 Bring it to a boil, then reduce to a simmer. 
The starch leaches out of the pasta and makes a rich, warm sauce for the noodles. 
The other ingredients cook right along with the pasta
Ingredients

12 ounces pasta (I used Linguine)
1 can (15 ounces) diced tomatoes with liquid
1 large sweet onion, cut in julienne strips
4 cloves garlic, thinly sliced
1/2 teaspoon red pepper flakes
2 teaspoons dried oregano leaves
2 large sprigs basil, chopped
4 1/2 cups vegetable broth (regular broth and NOT low sodium)
2 tablespoons extra virgin olive oil
Parmesan cheese for garnish

Directions

Place pasta, tomatoes, onion, garlic, basil, in a large stock pot. Pour in vegetable broth. Sprinkle on top the pepper flakes and oregano. Drizzle top with oil.

Cover pot and bring to a boil. 
Reduce to a low simmer and keep covered and cook for about 10 minutes, 
stirring every 2 minutes or so. 
Cook until almost all liquid has evaporated 
– I left about an inch of liquid in the bottom of the pot – 
but you can reduce as desired .

Season to taste with salt and pepper , 
stirring pasta several times to distribute the liquid in the bottom of the pot. 
Serve garnished with Parmesan cheese.

Fantastic Foodie Friday~Fat Burning Turkey Burgers


- Ingredients
1 pound ground turkey
1/4 cup minced onion
3 tablespoons chopped fresh parsley
2 tablespoons Worcestershire sauce
2 tablespoons minced green bell peppers
1 tablespoon soy sauce
1 tablespoon water
1 tablespoons fresh grated ginger
salt and pepper
2 cloves garlic crushed
This fat burning recipe is good for 3 burgers, each at 184 calories, 4 carbs and 4g of fat

- Preparation
Combine all ingredients in a large mixing bowl
Mix all ingredients together, it works best if you squeeze them together with your hands
divided into three equal patties, each about three quarters of an inch thick
lightly spray a nonstick coating to your frypan
cook over medium-high heat
cook each side for about five minutes, or until entirely cooked through
Give this High Protein healthy and tasty turkey burger recipe a try for yourself, 
I’m sure you’ll really like it!

My Life~

He has struggled, and lived in darkenss,
but he decided to rise above it.

It is a reminder to all of us that

Motivational Monday~ My Hero

Tonight, I watched one of the most emotional movies
 that I think I have ever seen.
It has touched me in the most profound way. 
 I wish that every person would take 
the time to watch this movie.
It reminds us that we have an Amazing Legacy
that is still here and we need to 
Honor them, now...
Time is fleeting,
we need to Honor those Men and Woman 
who fought for our Freedoms.
Tonight, 
I am going to ask for something.
For My Father, My Hero...
You see, he is a World War II Veteran.
He is planning on taking a flight
that is not just a trip,
but a journey into the past.
To have the chance to see 
that even though when he came home
so many years ago, and packed away all of his 
military gear and memories,
and got to work taking care of his family...
For him to know that his service and all those that he fought with 
are so vital to our Freedom that we cherish today.
So many have never had the chance to go to Washington DC
to see the Memorials that were built in Honor 
of those who fought for our Freedoms.
This September, My Father will get that chance.
He will be flying to Washington DC on an Honor Flight.
Tonight, I am asking each one of you
if you would take a moment, 
to write a letter, send a card or picture which will 
be given to my Father at his final mail call on the way home.
When my Father was in the service, 
 mail call was always the brightest moment of the day.
They didn't have e-mails, faxes, facebook or any of the 
things we have today to keep in touch.
It was mail call, that most of the military lived and died by.
To get a letter from their loved ones to hear how 
things were and just to hear words of love.
As a Marine serving, 
I can remember how much a letter from home,
 from a friend or even  from someone I may have never met
meant to me.  
The words of encouragement could help me in my 
times of struggle, no matter what I was facing at the time.
I, to this day, still have each one that was sent to me.
If you want to help me Honor my Hero, my Father
would you please send me what you want him to receive  
at his final mail call.
I will be putting a package together for him to get.
Thank you in advance for your time and for helping 
me to Honor a man who has helped to shape me into the 
person I am today.
