Zzzz~

This baby is tired! 
After getting home in the wee hours this am from working the 
Rock & Roll Hall of Fame Induction Ceremony 
I had to take a moment of pause.
Whew,  I was TIRED!
I spent most of the day catching up on much needed sleep.
I was actually shocked how exhausted I was today.
I had something else that I was going to blog on, 
but
then it just slipped right out of my mind.
I guess if I was going to take any day of rest,
 today would be it.
So, this 7th day I rested...
I hope that with sleep tonight I will be ready to face tomorrow...

Rock~N~Roll~

This would have been my post for Saturday, April 14 2012.
Last night I had the once and a life time experience of working at the Rock & Roll Hall of Fame Induction Ceremony.  It was amazing to be able to see all of the "behind the scenes" things that go on.
From the lighting, sound & cameras, to the teleprompters and stage work.
Then you have the people that are working in the service level.  
The food service, hospitality and valets.
Then the security...
It truly was heart warming to hear guests say how wonderful not only was the show
but everyone that worked so hard to put it on.
I actually had a guest that stopped me on the way out and Thanked me for all that I did to make their experience memorable.
It was a very heart warming & rewarding moment for me.
I would have loved to take pictures of some of the things that took place last night, 
but the contract with the client didn't allow us to.
All I can say is that I was very grateful for the opportunity & the pictures that are in my head 
from last night will play on for years to come...

Fantastic Foodie Friday~ Eggplant Caviar

With over 15 years of experience, Top Chef All-Stars winner Richard Blais knows how to please a refined palate. His recipe for eggplant-based caviar is a budget-friendly answer to one of the most expensive foods. Treat yourself without breaking the bank!


Ingredients
1 eggplant
1 tbsp honey
1 tbsp Sherry vinegar
1 tbsp basil, chopped
Salt and pepper to taste

Directions
Prick the eggplant a few times with the tines of a fork. In an oven preheated to 350°F, on a cookie tray lined with foil, cook the eggplant whole for an hour and a half, or until it is completely collapsed and wrinkled. Open the eggplant and scoop the flesh from inside. Hand mince this and squeeze out or let sit in a colander for a few minutes to become drier. It should resemble caviar now. Add the remaining ingredients and use as a condiment or topping for pretty much anything.

Birthday Thoughts~

On this day, marking my 41st year
in my journey...
 I have learned so much.
These are my footprints...
My deepest debt of grattitude is owed to my parents,
for with out them,
 I would never be...
I hope that I turned out to be one of your greatest accomplishments in your life...
Although I have never won the lottery, I am one of the richest people I know.
My riches are not found in possessions, but in the friends that are in my life.
I have experienced the greatest loves
 & 
with those, I have sometimes suffered the deepest heartaches.
With each one, I learned. 
 The lessons, were not always ones I wanted to learn 
or were easy, but with every lesson, I grew.
Each one, molding me into the person I am today.
I Thank those that broke my heart & treated me poorly.
They taught me that being cruel, hateful & morally bankrupt were things that I never wanted to embrace.
They instilled in me determination, power 
and made me learn a stronger sense of self.
To those that have loved me...
 I owe the deepest debt of gratitude. 
( One that I can never repay )
You gave me gifts that I continue to carry with me 
&
 cherish every day.
Forgiveness, Faith & to Never be Afraid.
My journey has taken me to so many places.
Sometimes, I can hardly believe the paths that have already been traveled.
My passion is Life...
Living every moment & finding the beauty along the way.
There may not always be sunshine, but through it all...
 I have learned to find the silver lining, after the rain.
Find your quiet balance...
If you desire change, you have to be the change you desire.
Do not Fear the Unknown...
Some of my greatest adventures, have made me the richest.
I would rather suffer in the knowing,
 than go to my grave wondering what if... 
Do not wait for others to bring you flowers, 
go out and plant your own garden.
We all have choices...
Be a mirror and reflect Love, Light & Beauty...
Be mindful of the words you speak, they live long after the moment has passed... 
Every day we are alive we have the chance to leave footprints...
Impressions, that will live on long after we are gone.
I hope that when I am called home, people will remember me with smiles, not sadness.
Your Life is just that...
Yours...
Do not let anyone Steal your Dreams, Squash your Desires or Shred your Hope.
Never let anyone leave you feeling like you are a Victim or have No Worth.
Always try to heal a hurt & admit when you were wrong.
There is healing in forgiveness and being forgiven.
No one was put on this Earth to travel it alone, but never give up control of your compass.
Sometimes as much as it hurts, you have to let people go for one reason or another.
Cherish the moments that you were given & try to always see the gifts that they left you.
I have done many things in my life that I am proud of, 
but my greatest accomplishments are, 
&
 will always be my children.
Do not wish away any part of your life...
Some people are "Killing Time"
 while others are wishing for
 "Just one more Moment".
If there is something that you want to do, 
don't wait for tomorrow...
As we are never guaranteed another sunrise.
Take too many pictures, Love with all your Heart 
&
 Never be Afraid of what Lies Ahead...
I just want to take a moment to...
Thank each and everyone of you that have been a part of my past and present...
These are my thoughts as I mark my 41st year in my Journey of Life...
So many songs that I Love, but this one continually speaks to me through my journey...

Know this~

It is amazing how everything can change in one moment...  
Learn to Forgive...
Know that life is short & you must grab every moment you can.
There are no re-do's.
Your life is not a dress rehearsal.
Do not live your life with what if's...
Take time to appreciate the little things.
Take too many pictures,
Laugh, till you cry...
Find the beauty in every day.
Never leave words unspoken...
Love will carry you through the most difficult times...
Trust your heart...
Build the life you dream of, and never let go of your dreams...
