Savvy Saturday~ Race for the Cure

I had the opportunity to once again participate 
in the Cleveland Race for the Cure.
It was an Amazing experience.
This year the weather was beautiful,
the "Cure Leaders" grew in numbers,
 from 5 to over 25 strong.
Cheering on the participants.
I got to wittiness people from all walks of life.
Men, Women, Children there were 
Families, Teams of Friends,
Survivors 
and 
people that just wanted to bring about a change...
It was heartwarming to say the least to 
have the chance to be there to support them all.
I have deep roots in seeing Breast Cancer 
brought to it's knees...
I truly believe if we find the Cure for one,
the rest will follow...
Find a way to help us bring about 
a Cancer Free World...
Donate in any way you can.
You will be surprised what little it takes
to make a huge impact!

Fantastic Foodie Friday~ Shrimp-&-Avocado Rice Bowl


Simple to make & a great flavorful meal...


Prep time: 10 minutes
Cook time: 10 minutes
Makes: 4 servings
Ingredients
16 medium cleaned, shelled, tail-on shrimp (about 3/4 pound), thawed if frozen
2 teaspoons sesame oil
1 1/2 teaspoons honey
Small pinch cayenne pepper
2 eggs, lightly beaten
1 tablespoon light soy sauce
1 tablespoon rice wine vinegar
1 cup shelled edamame, steamed
2 teaspoons toasted sesame seeds
1 1/4 cups short-grain brown rice, cooked according to package directions
1 ripe avocado, sliced
Directions
1. Preheat the broiler. In a medium ovenproof pan, toss the shrimp with 1 teaspoon each of the sesame oil and the honey. Add the cayenne.
2. Lay the shrimp flat. Broil for 2 minutes per side. Transfer to a plate.
3. Heat a small nonstick skillet over medium heat and add the remaining teaspoon of sesame oil. Pour in the eggs. Cook undisturbed until set, about 2 minutes. Flip and cook until just set on the second side, 1 more minute. Transfer to a board and cut into strips.
4. In a small bowl, combine the soy sauce and rice wine vinegar with the remaining 1/2 teaspoon honey.
5. Fold the edamame and sesame seeds into the rice. Serve the rice in bowls topped with the egg strips, shrimp, and avocado. Place the soy-vinegar mixture in a small bowl and use at the table for drizzling.
Nutrition facts per serving: 483 calories, 30g protein, 56g carbohydrate, 16g fat (2.8g saturated), 6g fiber

Scent~

Most people don't think, 
 about how scents impact their lives 
 until they have to. 
We know what smells we enjoy, 
and which ones we don't like. 
How for some the smell of something 
 being cooked in the kitchen  
brings back a flood of childhood memories. 
Other smells can remind us 
 of things we wish we could hold on to forever, 
 or  
even want to forget... 
Sometimes it takes becoming pregnant, 
have migraines or going through chemo.  
To learn something that you may have forgotten... 
That scents play into so much... 
They actually have the power to make you physically ill. 
Over the last few days, 
 I have been dealing with  
debilitating migraines. 
I have been reminded just how much the slightest  
smell can trigger so many responses... 
I forgot how violent some could really be. 
As I move forward, 
I have a found a new appreciation  
for people who say that a certain fragrance 
or smell actually makes them sick. 
Sometimes, it takes being in someone else's 
shoes to appreciate their view...

Today is a day that everyone will remember...
Exactly where they were,
what they were doing 
and 
the feelings that they felt.
Everyone was impacted...
Today is a day of Remembrance...
I hope you take a moment 
to hug your kids a little tighter,
tell those you love, how much they mean
