As I enjoy the last moments of summer, while I can. I happened to find this recipe and love the fresh ingredients as well as the taste. Sometimes when you just don't feel like a big meal or you just want a quick healthy snack you can make something like this...Quick, easy and healthy. Walnuts are a nutritional powerhouse, aiding in various areas of cardiovascular functioning, so adding them to your fruit salad is a great way to give it a healthy boost. It definitely doesn't hurt that they're coated in a sweet and spicy glaze.
INGREDIENTS:
- 1 pint strawberries, halved
- 1 6-oz pkg raspberries
- 1 mango, chopped
- 2 kiwis, sliced
- 2 nectarines, chopped
- 1 tbsp raw honey
- 3/4 tsp cayenne pepper
- 1/2 cup walnuts, chopped
INSTRUCTIONS:
Combine fruit in a large bowl. Preheat broiler to high. In a small bowl, stir together honey, 1 tbsp hot water and cayenne. Add walnuts and mix until well coated. Spread walnuts onto a cookie sheet. Broil for 2 to 3 minutes, watching to avoid burning. Add walnuts to bowl of fruit. Stir and enjoy.
