The word of the day:
There are many types of fortitude that can be shown.
Some show it in their actions, others in words and some in deeds.
We never know where we will need to have or show it, but it 
is a very useful tool to have.
Just when you think you can't, 
you find the stregnth to go on.
Some of us need it for our jobs, relationships or health.
However you find that you need to exercise your fortitude,
know that it is not for the faint of heart.
It will just about take all you can muster to do.
It may only be needed for a short time
&
other times you will need to dig in for the long haul.
Whatever the case may be,
we all have it.
We need to learn how to harness it and use it 
when it is needed most.
Some days will be harder than others,
but with just the little bit of fortitude...
You will get through what ever adversity
lies ahead.
Don't give up!

Ohhh, What I Wouldn't Give~

Have you ever had a day when you would like to spend it in

Yes, that is where I would love to be today...
Relaxing and taking in the scenery.
Instead I will be working.
Providing security for Kenny Chesney & Tim McGraw...
I know that I will enjoy the music,
just not sure how it will go with the fans.
Looks like it will be beautiful weather 
so that should be a plus 
( in my favor ).

Fantastic Foodie Friday~Chicken and Shiitake Marsala


Marsala, a fortified Italian wine recognized for its golden brown color and sweet, nutty flavor, is used in both sweet and savory dishes. Along with the smoky mushrooms in this recipe, the wine creates a rich, aromatic sauce. Dry sherry is a good substitute for Marsala. Made this recipe and it was delicious! There was not enough sauce. I increased to 2 cups of Marsala and 1 stick of butter. Probably increases the calories but it's definitely worth it!  Also, you can change out the mushrooms and use baby portabella mushrooms.

Sautéing brings out the shiitake mushrooms' strong smoky flavor. Doing so in Marsala, a nutty and sweet fortified wine, creates a surprisingly complex flavor profile with just a few ingredients.


Pantry Checklist:
  • Chicken breasts (4)
  • Fresh shiitake mushrooms
  • Marsala wine (or dry sherry)
  • Green onions
Prep: 1 minute
Cook: 14 minutes




Ingredients

  • Preparation
  • (6-ounce) skinless, boneless chicken breast halves 
  • Cooking spray
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • (3 1/2-ounce) packages shiitake mushrooms, sliced
  • 1/2 cup Marsala wine
  • green onions, finely chopped (about 1/3 cup) and divided 
  • 2 tablespoons butter
  1. 1. Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/2-inch thickness using a meat mallet or small heavy skillet.
  2. 2. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Sprinkle chicken evenly with salt and pepper. Add chicken to pan. Cook 5 to 6 minutes on each side or until done. Remove chicken and drippings from pan; set aside, and keep warm.
  3. 3. Heat pan over medium-high heat; coat pan with cooking spray. Add mushrooms. Coat mushrooms with cooking spray; cook 2 minutes or until tender, stirring frequently. Add wine and 3 tablespoons onions. Cook 30 seconds over high heat. Reduce heat; add butter, stirring until butter melts.
  4. 4. Add chicken and drippings to pan, stirring gently. Place chicken on platter. Spoon mushroom sauce over chicken; sprinkle with remaining onions.

Motivational Monday~ Perseverance

There are days that we all feel like giving up.  
When it would be easier to throw in the towel and not bother.
  The feeling of... 
This isn't worth it, it is too hard 
and
 it would just be easier to let go.  
Those are the days you need to dig your heels in, 
stay the course 
&
not let those feelings consume you.  
Life is full of challenges...
Are you going to run from them or face them head on?
Life will constantly throw things at you.  
It will force you to change.  
Some of these changes will make you stronger, 
others will teach you a lesson.  
It is part of growing.  
Not all of it will be pleasant, 
some of it,
 is down right painful. 
You have to believe...
Have faith and know that you may not see the big picture as you are in the throws of it, but when you achieve what you are working for...
 You will be able to look back,
 with a sense of accomplishment.  
As we go through life our experiences change us.
Thinking back to High School, 
people would always ask,
 where do you see yourself in 5, 10 years?  
Looking back... 
My life has gone through so many chapters and changes.
Who I was in High School is not who I was in College, 
or in the Marine Corps or even today.
I have constantly changed and adapted over the years.  
One thing has always remained the same, 
my desire to see the beauty in the world.  
I have never allowed the darkness to consume me,
 no matter how dark the day may seem in that moment.  
I challenge you...
Dig Deep, 
Hold On 
&
Don't Let Go... 
No one said it would be easy, 
they just said that in the end it would be worth it. 
I believe that with my whole heart...

Savvy Saturday~ Proud VET Leather ~ Follow up

Have you ever had a shopping experience that is so over the top that you just have to tell someone?
I have had that, with Proud VET Leather.
  Working with Steve, I have now had 3 items made that are just for me, and they are exceptional.

Fantastic Foodie Friday~ Chicken Saltimbocca


Here is a recipe that takes a little bit of work, but it is worth the end result.
It can be paired with a healthy side dish or light salad.


Ingredients

  • 6 (3-ounce) chicken cutlets, pounded to evenly flatten
  • freshly ground black pepper
  • 6 paper-thin slices prosciutto
  • 1 (10-ounce) box frozen chopped spinach, thawed
  • 3 tablespoons olive oil
  • 1/4 cup grated Parmesan
  • 1 (14-ounce) can low-salt chicken broth
  • 2 tablespoons fresh lemon juice

Directions

Place the chicken cutlets flat on the work surface. Sprinkle the chicken with pepper. Lay 1 slice of prosciutto atop each chicken cutlet.
Squeeze the frozen spinach to remove the excess water. Season the spinach with salt and pepper. In a small bowl, toss the spinach with 1 tablespoon of oil to coat.
Arrange an even, thin layer of spinach atop the prosciutto slices. Sprinkle the Parmesan evenly over each. Beginning at the short tapered end, roll up each chicken cutlet as for a jellyroll. Secure with a toothpick.
Heat the remaining 2 tablespoons of oil in a heavy large skillet over high heat. Add the chicken and cook just until golden brown, about 2 minutes per side. Add the chicken broth and lemon juice, and scrape the browned bits off the bottom of the pan with a wooden spoon. Bring the liquid to a boil. Reduce the heat to medium. Cover and simmer until the chicken is just cooked through, about 8 to 10 minutes. Transfer the chicken to a platter. Simmer the cooking liquid over high heat until it is reduced to about 2/3 cup, about 5 minutes. Season the cooking liquid with salt and pepper, to taste. Remove toothpicks from the chicken. Drizzle the reduced cooking liquid over the chicken and serve immediately.
Per Serving: Calories: 227; Fat: 11g (Saturated Fat: 2g); Protein: 27g; Carbohydrates: 4g; Sugar: 1g; Fiber 0g; Cholesterol: 63mg; Sodium: 700mg

even if it is to just to listen to you.
Every day we face challenges,
sometimes,
we just need that person
to help us see things in a different light.
Where all you see is dark clouds on the horizon,
they will show you the silver lining.
Sometimes, they will just comfort you.
Other times they will hug you tight.
You just need to be willing to reach out 
for that friend.
When things aren't going right...
Tonight, I say Thank you to all of my 
friends that have been that for me.
